Recipe of the Month
July - Rice Krispie Treat Cookies
Ingredients:
-
1 cup of butter, and simmered until brown

2/3 cup granulated sugar
-
1 cup brown sugar
-
2 eggs, room temperature
-
2 teaspoons vanilla extract
-
2 3/4 cups All Purpose Flour
-
1 tsp salt
-
1 tsp baking soda
-
1 tsp baking powder
-
1 1/2 cups mini marshmallows, frozen
-
1 1/2 cups Krispie Rice Cereal
Directions:
- Pour browned butter into a bowl, add sugars and mix to combine.
- Add eggs and vanilla extract.
- Mix flour, salt, baking soda and baking powder then add mixture to wet ingredients and mix to combine.
- Add marshmallows and cereal, mixing gently.
- Tray 8-10 cookies per tray and refrigerate for 30 minutes.
- Bake at 350 degrees for 10 minutes or light brown.
June - 4th of July Dessert
Ingredients:

Half of a 10.75 oz. frozen pound cake
- 12 strawberries
- 1/2 cup of blueberries
- Can of whipped cream
- Red, white and blue sprinkles (optional)
Directions:
-
Layer pound cake in the bottom of a cup or small trifle dish
- Add a layer of diced strawberries
- Spray a layer of whipped cream
- Add a layer of blueberries
- Spray a layer of whipped cream
- Top with diced strawberries, blueberries and sprinkles
May - Hawaiian Kabobs
Ingredients:
-
14 ounces of your favorite kielbasa or smoked sausage cut into bite size pieces
-
1 onion cut into chunks (we use red or Vidalia)

3 bell peppers cut into chunks
-
3/4 cups pineapple chunks (save the juice)
-
1/2 cup of your favorite BBQ sauce
-
1 tablespoon soy sauce
-
8 long wooden skewers
Directions:
-
Soak skewers in water about 30 minutes prior to assembly to avoid burning, especially if grilling.

Skewer the sausage, peppers, onions and pineapple, alternating as you wish.

Stir together the BBQ sauce, soy sauce and about 2.5 tablespoons of the pineapple juice and brush onto the skewers, saving about half to apply during cooking.

Place skewers on a grill or on a skillet as we did, rotating until veggies are cooked to your preference, adding more sauce as you go.

We enjoy ours over rice which we make using the remaining pineapple juice instead of water, for some additional Hawaiian flavor.
April - Frozen Strawberry Limeade
Ingredients
-
3/4 cups lime juice (fresh is best)
-
3 cups cold water
-
1/2 cup plus 2 tablespoons white sugar
-
1 1/2 cups ice cubes (add more or less for your desired thickness)
-
3 cups frozen sliced strawberries
Directions
-
Slice and freeze strawberries the night before (ours weren't very sweet so we sprinkled with a little additional sugar before freezing)

Add strawberries, sugar and ice to blender
-
Pour in water and lime juice
-
Blend until smoothEnjoy!
March - Shepard's Pie Bites
Ingredients
- 1 lb ground beef
- 1 onion diced
- 2 Tablespoons minced garlic
- 2 Teaspoons worcestershire sauce
- 1 Cup beef broth
- 1 Tablespoon tomato paste
- 1.5 cups of frozen peas and carrots
- 2 cups of prepared mashed potatoes
- Salt, pepper and paprika
Directions
- Saute beef and onions
- Add minced garlic, worcestershire sauce, tomato paste and broth, simmer until thick
- Add peas and carrots as well as salt & pepper to taste
- Spray a mini muffin pan with cooking spray and then place on scoop of meat into each muffin cup, press down with spoon
- Top with a large scoop of mashed potatoes and a dash of paprika (optional)
- Bake at 375 degrees for about 20 minutes or until potatoes brown
February - Pizza Roses
Happy Valentine's Day!
Ingredients:
- 1 can of pizza dough
- 1/2 cup of pizza sauce
- 4 ounces of mozzarella cheese sliced or shredded
- About 48 slices of pepperoni
Directions:
- Spread out pizza crust and cut into 6 strips. We miscounted and cut 5, but some of our roses were a little on the thick side. You want to aim for 6.
- Spread a thin layer of sauce on each strip, not going all the way to the edge.
- Top each slice with cheese and a row of pepperoni. You want the pepperonis to hang over the side to form the rose look.
- Roll up each strip and pinch the ends together. Place them in a greased muffin pan and bake at 400 degrees for about 15 minutes or until the dough is golden brown.
January - Ham & Cheese Crescent Rolls
Ingredients:
- 1 can crescent rolls
- 4 slices deli ham, cut in half
- 4 slices of your favorite cheese, cut in half
- 1 tablespoon honey
- 1/2 tsp garlic powder
- 2 tsp Dijon mustard
- 2 tablespoons melted butter
Directions:
- Open and separate crescent rolls.
- Place a slice of ham and a slice of cheese on each crescent
- Roll it up, starting with the larger side.
- Place on a tray.
- Combine remaining ingredients and brush on top of each crescent.
- Bake at 375 degrees for approximately 12 minutes or until brown.
December - Santa Hat Brownies
Ingredients:

Brownie Bites
-
White frosting
-
Strawberries
Directions:
- Make brownie bites in a mini muffin tin or purchase them pre-made.
- Add frosting to a piping bag or plastic bag with tip cut off.
- Squirt frosting onto each brownie, and smooth with knife.
- Cut the tops off strawberries and place upside down on the frosting.
- Stop Santa's hat with a dot of frosting.
